Brennan’s – Bananas Foster

In the early 1950s, the produce company owned by the younger brother of Owen Brennan, Brennan’s founder, had a bananas surplus, so Owen tasked his sister Ella and Chef Paul Blangé to create a new banana dessert. The resulting dish, Bananas Foster, is made with bananas, butter, brown sugar, banana liqueur, and cinnamon, and rum is poured over the top and flambéed tableside.

Galatoire’s – Oysters en Brochette

Galatoire’s features its Oysters en Brochette dish, a decadent fried oyster wrapped with a half strip of bacon. This restaurant may not have invented the recipe, but it’s one of Galatoire’s most popular offerings, both for its Reveillon dinners and year round.

Broussard’s – BBQ Shrimp & Grits

Broussard’s includes this classic New Orleans dish on its 95-year-old menu, with shrimp sublimely cooked in butter and spices and served over creamy grits with smoked cheddar, candied pecans, and tomato jam.
